Broccoli Bisque Instant -Pot Recipe

This is just one of the many healthy, simple to make recipes from Chef AJ. Her story is fascinating and her books are filled with recipes are are just a great place to start! I especially love this one because you literally just toss the vegetables into the instant pot without cutting, chopping, dicing and then blend after it is cooked! Basically can make this soup without owning a knife!!


1-2 lbs broccoli ( can also use cauliflower too) ( I used fresh)

1-2 lbs. Yukon gold potatoes

6 cups vegetable broth or water (I used water)

1 large onion

8 cloves garlic

2 T dried ill

2 T of your favorite salt free seasoning (I used Sumac)

4 C plant-based milk of your choice

4 T Salt-free stoneground mustard

4 T nutritional yeast

Slivered carrots - optional for color.


  1. Place the first 7 ingredients in the Instant Pot and cook on high pressure for 6 minutes.

  2. Release the pressure and add the plant-milk, mustard and nutritional yeast.

  3. Blend with immersion blender or in your blender until smooth

  4. I put some slivered carrots on the soup to add some color.
