Coconut, crunchy bacon bits
I was so inspired after having a vegan hot dog with "coconut bacon bits" out in LA that I got home and searched for ways how to create this texture and flavor again.I hate to recreate the wheel so here is a wonderful recipe by Simple-Veganista.com that I have used and can never get enough of these. Great salad topper, Vegan pizza topping, Vegan hotdogs.
Ingredients:
2T Low-salt Tamari or Braggs Amino Acid
1T Liquid smoke
1T Maple syrup (more or less to taste - I found 1T to make it mildly sweet)
1/2 t smoked paprika
1-2 C coconut flakes, unsweetened
Directions: Preheat oven to 350
Stir the Tamari, Liquid Smoke, maple syrup and smoked paprika together in a bowl
Add in the unsweetened coconut and stir to coat all coconut for about 35 seconds
Lay flat out on silipat pad or baking tray lined with parchment paper.
Bake about 12-15 minutes checking and stirring every 5 minutes
Once they brown (not burn), remove from oven and allow to sit out as they get crunchier when cool. Store in an airtight container in frig.
Enjoy as a condiment or main topping.
