Colorful, crunchy veggies with easy to make Freekeh

Water sauté veggies and pile them high on top of Freekeh, the Ancient grain that has more fiber and protein than quinoa and rice with fewer calories. I love it as is or you can add in some Well Your World Asian Everything Sauce or your own favorite Thai peanut sauce. I don't add any spices as I love the flavors and crunch from these vegetables but feel free to spice it up as you like.


Ingredients:


1 red pepper - diced

1 small sweet onion - diced

3-4 baby bok choy - chopped

4 cloves garlic - minced

8 oz. mushrooms - sliced

1 can water chestnuts, drained and sliced

zucchini and carrots -sliced or diced

1 C Freekeh (cooked)

*Additional vegetables recommended that I did not have on hand are julienned zucchini and carrots, cherry tomatoes and yellow peppers.


Directions:

  1. Add 2-3 T water to pan and heat up

  2. Add onion and garlic 3 min.

  3. Add in the remaining vegetables including the bok choy and saute an additional 5-8 minutes

  4. Add in the drained water chestnuts and let saute a few minutes.

  5. Drizzle with Well your World Asian Everything Sauce or your own favorite.


Freekeh Directions:

  1. Stove top : bring 2 1/2 c water to boil and add Freekah -

  2. Cover and cook 15 minutes or until water is absorbed.
