Hot Lentil Stew for a cold night

Plantstrong has a Rustic Black Lentil Stew that I used for the basis of this one.

I used the Instant Pot to prepare this. It can easily be created in a large pot on the stove as well. With a few basic ingredients and spices, you have a yummy stew in less than half an hour.


Ingredients:

1 lb little potatoes (I used the variety pack from the Little Potato Company)

1 C brown lentils

1 -15 oz can fire roasted no salt tomatoes

1 medium yellow onion - diced

6 C water

1/2 C nutritional yeast

1 t cumin

1 t chili powder

1 t garlic

2 t Bragg's aminos

2 t smoked paprika

1 T French thyme

12 oz baby arugula

Black pepper to taste


Directions:

  1. Put all ingredients except for the baby arugula and pepper into instant pot and set on manual for 11 minutes. I did a slow, natural release.

  2. Add in the baby arugula and add black pepper to taste.

  3. Can eat as alone as a stew, serve it over potatoes or rice.
