Let's say no to the 3 C's: colds, coughs and covid!

Ok, besides getting vaccinated, what can you do to boost your immunity? Or, you feel that end of summer sniffle coming on and want to kick it, fast? This original, amazing recipe by the Veggie Queen is now SOS free and contains mega vitamins, minerals, antioxidants and fiber.


Ingredients:


3 C vegetable broth (I heat up old veggie pieces in water that I keep frozen for this purpose and then use the broth).

1 small onion chopped or sliced

1/2-1 diced jalapeno pepper

4 garlic cloves chopped

1-2tsp minced ginger

4 C chopped spinach or kale or your favorite greens

2-4 scallions, chopped

4 dried shitake or portabella mushrooms (Soak in warm water 15 min. prior and use water and mushrooms for broth)

1 C fresh mushrooms (I used shitake)


Directions:


  1. Dry sauté onions for 3-5 min. and add a little broth if needed to cook without burning

  2. Add the garlic , jalapeño and ginger and continue cooking

  3. Add in the remaining broth

  4. Add the dried mushrooms, the fresh mushrooms and greens

  5. Cook for 10 minutes.

  6. Top soup with chopped scallions and enjoy a hot bowl of goodness!
