Millet Mushroom Bowl in a Minute

For mushroom lovers! This is really a yummy and easy to prepare bowl. You can use any and all of your favorite mushrooms and with a few seasonings you have a very filling meal.


You do need to have the cooked millet on hand. I make it in the instant pot. I put in 1 Cup of millet with 1 and 3/4 cup water. I lock the lid and set on high pressure for 10 minutes. I let it release naturally and get several cups of fluffy millet.


Ingredients:


1 onion chopped

4-5 garlic cloves (chopped)

2 C mushrooms (chopped)

2T nutritional yeast

2T Smoked hickory Balsamic Vinegar (or tamari or soy sauce)

1-2 T Herbs de Providence (Rosemary, fennel and thyme)

1 C cooked millet


Directions:

  1. Saute onion for a minute or two in either a dry pan or 1-2 tsp. of heated water and add in garlic for another 2-3 minutes..

  2. Add in the mushrooms and cook for 5 minutes

  3. Add in nutritional yeast and stir

  4. Add in the spice and the vinegar and cook an additional 5 minutes.

  5. Spoon this over a cup of millet and enjoy
