This is a classic sweet treat created by Chef AJ. It is easy to make and is both delicious and visually very appealing.
2 C oats (grinded)
2 C dates
1 tsp. lime zest
1/4 C lime juice
6 C thawed, frozen mango
2 oz. dried mango soaked a few minutes in water
1 and 1/2 C Crushed raw, unsalted cashews
Grind the oats in a food processor or blender
Add the 2 C dates to oats
Add a few TBS water to moisten if needed
Add 1/4 C lime juice and 1 tsp. lime zest
Remove from blender and pat down evenly in a pie pan or a tart pan with removable bottom. Pat it down with wax paper
In blender add the thawed mango, 2 oz dried mango with some of the mango water and blend til smooth.
Add the cashews and blend
Spread the mixture over the pie crust.
Top with some mint, additional crushed cashews, raspberries, lime zest and sliced mango if desired.
refrigerate 4-24 hours so it sets. Enjoy!
