6 -8 Cups quinoa, cooked ( I made this using 2 cups of dry quinoa)
2 medium carrots, peeled and cut into small cubes
2 medium zucchini, trimmed, cut into small cubes
1 T Hungarian sweet paprika (I didn't have this so I used 1/2 T black pepper and 1/2 T cayenne)
In a large skillet, add 1 T water or no sodium broth and heat a few seconds.
Add carrots and saute 3-5 minutes until tender
Add zucchini and saute 3 additional minutes. Add a few Tbs. of water if needed.
Add the spices.
Add in cooked quinoa and toss.
