The best Kale Salad (It's all about the dressing!)

This kale salad is so versatile: sprinkle with almond slivers , sunflower kernels, pumpkin seeds, toss in pomegranate seeds, chopped apple or dried cranberries - if you like red onions, they look and taste great! The 5 ingredient dressing really makes this very flavorful.


Ingredients:


1 bunch Kale

2-4 TBSP. cranberries

1/2 small red onion - chopped

2-4 TBSP. sunflower kernels

1/4 C tahini

1/4 C water

2 tbsp. nutritional yeast

1 tbsp. lemon juice

1/4 tsp. salt substitute ( I used chick pea miso paste


Directions:


1. Remove the ribs from the Kale and chop and tear into bite size pieces

2. Massage the kale

3. Add the cranberries, onion and nuts or seeds to kale salad


Prepare the dressing

1. whisk the tahini, water, nutritional yeast, lemon juice and miso in a bowl.

2. Dress the Kale salad with dressing before serving. I really love this dressing so I douse it!
