Eggs are a primary source of cholesterol in the Standard American Diet and is sadly linked to cardiovascular disease and a number of cancers! This recipe replicates the smell, the look and flavor without that cholesterol! It uses a small amount of Black Salt along with nutritional yeast and chick pea flour to really give the quiche the taste of eggs.

1 block of firm tofu (pressed)
2 tsp. chickpea flour
3 TBSP. nutritional yeast
1TBSP. miso paste
1/4 tsp. turmeric
1/2 tsp. onion powder
1/4 tsp. black salt
1/2 tsp. pepper
3 cloves garlic
1 Cup broccoli - Chopped
1 red pepper - chopped up
1/2 Cup corn
2 scallions, roughly chopped
Any other veggies you would like to add
Preheat oven to 350 degrees F.
Press the tofu so excess water is removed
Water saute the peppers, broccoli, garlic, corn and scallions
Puree the tofu with the spices, seasonings, chick pea flour and miso
Combine tofu mixture with the vegetables
Divide the batter into muffin cups ( makes approximately 10)
Bake 30-35 minutes and let stand 10 before removing to serve
