Having never experimented with Gyros I have researched and learned that vegan gyros can apparently be made with Jackfruit, Seitan or Portabela mushrooms. Because I was making a dinner for someone who doesn't like mushrooms, I went with the Seitan recipe from https://zardyplants.com/recipes/vegan-seitan-gyros/
Was easy to prepare and tasted delicious!
Served with sides of sliced cucumbers, tomatoes, and lettuce.
Since Delicata squash is in season now we also had a side of air fried squash that was splashed with garlic powder.
The Tzatziki sauce -Straight Up Food cookbook by Cathy Fisher.
2 oz raw, unsalted cashews (about 1/2 cup)
1/3 cup water
2 T lemon juice
1 small garlic
1 Cup chopped cucumber (peeled, include seeds)
2T fresh dill (or 1/2 t dried)
1. Place cashews, water, lemon juice, and garlic into blender and set aside for at least 15 min.
2. Blend sauce until smooth
3. Add the cucumber and dill and blend briefly. Add water if necessary and chill for the best flavor.
