Better than egg nog! Creamy, eggless nog.

I found out about this recipe from Chef AJ and I was thrilled to learn that without serving dairy, fat and sugar I can share some rich and tasty eggless nog with family and friends. With 5 WFPB ingredients you too can indulge yourself!


Ingredients:


2 C Hannah yams (also called Jersey or white sweet potatoes)

* Roast, peel and chill ahead of time

*If you cannot find Hannah yams, you can substitute Japanese sweet potatoes

2 large frozen ripe bananas, peeled

1/2 tsp. nutmeg or more to taste

1/2 tsp. vanilla powder

2 C unsweetened, non-dairy milk

* Can add 1 tsp. allspice if desired


Directions:


Place all the ingredients in a high-powered blender and blend till creamy and smooth. Pour into a glass and top with a sprinkle of nutmeg and/or an apple wedge or cinnamon stick.
