Spicy,Veggie,Tofu Stir-fry
I had seen a similar recipe on Dr. Fuhrman's site and thought I'll try to recreate it a bit differently. I used some fresh crushed pineapple in the sauce, canned crushed pineapple would work too! You can really create your own unique stir-fry with your favorite greens and veggies!! Next time, I will add in some red pepper to add more color!!
Indredients:
The vegetables I used:
3 C Chopped Bok Choy
1 onion-chopped
4 C broccoli florettes
3 C chopped mushrooms
*You can add in additional vegetables like, chopped carrots, snow peas, spinach/greens.
The Sauce
1/4 C crushed pineapple
1/4 C natural peanut butter - unsalted
2T chopped ginger
4 cloves chopped garlic
1/4 C balsamic vinegar
pinch of red pepper
*I stirred these ingredients together and then poured over cooked veggies
Tofu prep:
1 block Tofu cut into small cubes
1T balsamic vinegar
pinch of red pepper
1/4 C sesame seeds
Directions:
1.Preheat oven to 350 degrees
2 Press out excess water from tofu, then cut into cubes.
3.Prepare the marinade for the tofu by mixing ingredients together and let tofu marinade for 15 minutes.
4. Mix the sauce ingredients together in a blender, food processor or hand mix and set aside.
5. Water saute the onions for 3-5 minutes and then add in the broccoli an additional 3 minutes. Add more water as needed for the saute.
6. Add in the mushrooms and bok choy until all is cooked.
7. Add in the Sesame seed covered tofu and stir.
8. Stir in the sauce and stir well on high heat for several minutes.
9. Serve over the rice of your choice.
